How can I find a specific consumable for a mission?

Specific consumables can be found by opening the cargo window and scrolling to the nearby section and using the "consumables" group. This group features a search box where you can search for a consumable by name. The results will list systems that have this abundant consumable to gather.

A mission will never ask you to do things you cannot, so the consumable will have been found by someone in your faction already.
